To strain honey, use cheesecloth and press it through. However, although this old technique calls for straining the honey, most commercial honey is already strained--only strain if you are using honeycomb honey.
Ingredients
1/2 cup shortening
2/3 cup sugar
1 whole egg
1 egg yolk
1/2 cup strained honey
1/4 cup lemon zest
2 cups flour
1 teaspoon salt
1 egg white
2 teaspoons baking powder
1/2 cup flour, 1/2 cup sugar (for pressing)
Preparation
In a large mixing bowl, cream shortening and sugar.
Add whole egg and egg yolk.
Stir in honey and lemon zest.
In a separate bowl, sift flour, salt, baking powder and sugar together.
Slowly integrate into mixture.
Once mixture is fully integrated, drop onto a parchment lined baking sheet in 1/2-inch mounds.
Flatten with the bottom of a glass dipped in a mixture of flour and sugar.
Brush the top with egg white.
Bake for 13-15 minutes, until top becomes a golden brown.
Remove from baking sheet and place on wire cooling rack.
