Recipes: Silver Pie

Silver Pie

Think of light lemony egg custard layered in a buttery-rich chocolate cookie crumb pie crust and you may just be a Carolina Panthers fan! Their colors are silver, blue, and black and you can just taste victory when you bite into this delightful dessert!

This pie is served chilled topped with mounds of sweet vanilla whipped cream. The pie filling also tastes great layered in a graham cracker crumb crust or traditional baked pie crust.

Foodie Byte

Ingredients

1 envelope unflavored gelatin
1/2 cup cold water
4 large eggs yolks
Zest of 1 lemon
6 tablespoons fresh lemon juice
1/2 cup white sugar
1/8 teaspoon salt
4 large egg whites
1/2 cup white sugar
1 chocolate cookie wafer or graham cracker crumb pie crust, 9-inch
Sweetened whipping cream, as needed

Preparation

Combine gelatin and water; stir to blend. Let sit 5 minutes.
In the top half of a double boiler, combine 4 egg yolks, lemon zest, lemon juice, ½ cup sugar and salt.
Place over boiling water in bottom half of double boiler; whisk constantly until custard thickens (do not boil).
Remove from heat, add gelatin and whisk until fully blended.
Cool mixture.
In mixing bowl, combine egg whites and ½ cup sugar; beat until stiff and soft peaks form.
Fold into cooled custard mixture; pour into pie shell and chill thoroughly.
Top chilled pie with whipped cream. Cut pie into 8 slices.
