You’ve been asking me for new soup recipes, so I am delivering! Italian Escarole and Chickpea Soup with Garlic Toast is easy, comforting and healthy, with only 7 ingredients, not counting salt and pepper, and ready in under 20 minutes. My favorite part is the sourdough toast that I rub with a raw garlic clove – something my dad always used to do, which reminds me of him. This soup is also budget-friendly as it uses one of my favorite pantry staples – chickpeas, which are so healthy and high in fiber. Most traditional Lobster Bisque recipes call for heavy cream, and I think you’ll be pleasantly surprised how great it tastes without all the cream. Pureeing the soup before adding the lobster meat makes it thicker, resulting in a much lighter yet just as delicious bisque. Brothy Beans and Greens are the perfect Sunday dish because they need only a little prep on the front end, and then you can leave them alone to simmer. The results are a deeply flavorful stock and super-tender beans. Make them on the stove on weekends or in the Instant Pot if you want them ready in under an hour, I tested them both ways. More of my favorite bean recipes are these Dominican Beans, Puerto Rican Beans and Mexican Pinto Beans with Queso.

Here’s a great recipe to add flavor to chicken breast! If you like spicy food, jarred cherry peppers are the perfect addition to pretty much anything, especially sandwiches, salads, and charcuterie boards. So, I thought, why not add them to chicken? The results were a spicy, salty, and slightly acidic dish, which turned out delicious – and did I mention spicy?! I made this chicken recipe similar to Chicken Francese, only without the lemon and with added hot peppers.

My Mom made Strawberries Romanoff all the time when we were kids and we just loved it! She learned it in cooking school and since it was so simple to make, as a kid I made it all the time. Some people add orange zest or a splash of Grand Marnier but I think it’s perfect without. It’s easy to whip up and makes a great after dinner dessert. More light desserts you might enjoy are Strawberries and Cream, Vanilla Bean Panna Cotta with Strawberries as well as these Strawberry Squares.
