You can make this in a cake pan if you prefer one cake rather than personal-sized cakes.

Ingredients

1/2 cup butter
1 cup brown sugar
1 cup milk
1 1/2 cups flour
1/2 teaspoon salt
1 cup granulated sugar
8 slices pineapple, drained
8 maraschino cherries
1/2 cup shortening
2 teaspoons baking powder
1 egg

Preparation

Preheat oven to 350°F.
Grease 8 individual baking pans.
Place 2 tablespoons butter in each of the 8 baking pans and melt in the oven.
Remove from oven.
Sprinkle brown sugar evenly between all 8 on top of melted butter.
Place a single pineapple ring in the middle of each pan, adding the maraschino cherry in the middle.
Set aside.
Combine flour, sugar, salt and baking powder together in a mixing bowl.
Add egg, milk, and shortening, mix until well integrated.
Carefully spoon batter over pineapple and cherry in each baking pan, so that they do not move while batter is being added.
Divide remaining batter evenly between all 8 baking pans.
Bake 35 to 40 minutes or until toothpick inserted comes out clean.
Once removed from the oven, immediately flip the baking pans over to release the cakes.
