Not only are these blueberry pancakes a great way to start your morning, but they also promote healthy digestion by being completely organic and gluten-free. Top this recipe off with vegan butter and maple syrup for a bit of extra sweetness!

Ingredients
1 1/2 cups dairy and gluten free pancake mix
1 tablespoon flax seed (ground)
3 tablespoons water
1 cup coconut milk
1 1/2 tablespoons coconut oil
6 oz. organic blueberries
Preparation
Combine the water and the flax seed into a bowl and mix evenly.
In a large mixing bowl, combine the pancake mix, coconut milk, coconut oil, and the flax seed.
Whisk the mixture until smooth and even. It won't be perfectly smooth, but that's ok.
Add the blueberries and mix until evenly distributed.
Cook the pancake mixture on medium heat for about 1 1/2 minutes on each side or until golden brown.
To plate, add vegan butter and maple syrup.
