Ingredients

1/2 cup sugar
1 tablespoon cardamom powder
1/4 teaspoon salt
2 teaspoons baking powder
2 cups flour
2 eggs
1 cup milk
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 cup apples. diced
1 cup walnuts, chopped
1 cup golden raisins, chopped
SAUCE:
1 cup sugar
1/2 cup water
2 egg yolks
1 teaspoon lemon extract
2 cups whipped cream

Preparation

Preheat oven to 350°F.
In a mixing bowl, combine sugar, cardamom, salt, baking powder and flour.
Add in eggs, milk vanilla extract and almond extract.
Slowly integrate chopped walnuts, raisins and apples.
Divide mixture between 8 greased individual pans—either 4-inch baking pans or large ramekins.
Bake for 35 to 40 minutes, or until a toothpick comes out clean from the center.
Let cool.
To create the sauce:
Combine sugar with water in a stovetop pan, and heat over low heat until sugar hits the soft ball stage and the melted syrup can pull to thread.
Remove from heat, mix in whipped cream and lemon extract.
Temper in 2 beaten egg yolks once whipped cream has cooled the mixture down.
Stir well, and serve generously over puddings, breaking the puddings up as you go to allow the sauce to soak in.
