Waffled Vegetable Latkes

These veggie-packed latkes, are not your traditional latkes, they’re made with shredded potatoes and a mix of carrots, zucchini and bell pepper, PLUS they're cooked in a waffle iron so there’s no need to fry! What to serve with latkes is completely up to you, my favorite is with sour cream, lox, capers and red onion, or simply with apple sauce on the side. #latkes #hanukkah

Want an easy turkey recipe that’s moist and flavorful? Try dry brining! Rather than wet brining a turkey, dry brining is so much easier and less messy! This is how I am making my turkey again this year, my third year in a row! It takes 4 days to brine, but I am starting one day late (today) which is perfectly fine! And if you don’t need to make a whole turkey, you might love this stuffed turkey breast or this slow cooker turkey breast recipe.

This healthy baked pumpkin pasta bake is total comfort food. I know it’s rare to hear the words “healthy” and “comfort food” in the same sentence but hear me out! The pumpkin, kale, cannellini beans, and whole-wheat pasta give this dish a ton of fiber, and the gruyere and pancetta give it that comfort-food element while adding protein. I bring this dish to my mom’s every year for Thanksgiving because everyone loves it! Much lighter than a traditional gratin and so easy to make! This is a must for the holidays but if you want to make this for a smaller gathering, you can easily make half of the recipe. More gratin recipes I love Brussels sprouts gratin,  Spiralized Turnip and Potato Au Gratin with Turkey or the classic Scalloped Potatoes Au Gratin.

Sauteed brussels sprouts are delicious when shredded and sautéed with pancetta (or bacon), garlic and oil. If you don’t think you like Brussels sprouts, I challenge you to try these! I love when people tell me they don’t like Brussels sprouts, then quickly change their mind after tasting them prepared this way. I too once thought I didn’t like Brussels sprouts until my girlfriend Nicole turned me on to shredded them before sauteing in garlic and oil. Now I love them! You can easily prep everything to make this a day or two before if you are making this for Thanksgiving. You should also try Brussels Sprouts Gratin,  or  Maple Soy Glazed Roasted Brussels Sprouts and Butternut Squash with Bacon.
