Black Bean, Avocado, Cucumber and Tomato Salad

A little lime and cilantro make this Black Bean, Avocado, Cucumber, and Tomato Salad a perfect companion for air fryer chicken breast, grilled chicken or steak. You can also serve this with chips as a dip, or serve it over grilled salmon.

My girlfriend made this refreshing black bean avocado salad years ago at a party, and we’ve made it a tradition at summer cookouts. It is the perfect side dish to take to a party in the summer or serve it with chips as a dip. I’ve also served this over grilled salmon, it’s so versatile! If you need some easy side dishes to make this summer, you’ll love this Grilled Corn Salad with Cotija. It’s inspired by elote, Mexican corn on the cob covered in mayo and topped with chili powder, lime juice, and cheese. For this Mexican street corn salad, I take the corn off the cob, skip the mayonnaise, and mix everything together for a light summer side dish. This dish is great with air fryer salmon, grilled chicken, shrimp, fish, rice, etc., making it the perfect side for any summer BBQ. There’s a nearby restaurant that makes this vegetarian Chickpea Milanese that I loved so much I had to recreate it – with my own spin, of course! Milanese is one of my favorite things to order when I go out. So, when I tried this vegetarian one, I thought it was genius. It’s served with an arugula chickpea salad with tomatoes and fresh lemon. Chickpeas have plenty of protein and fiber, making them so versatile in vegetarian and vegan diets. I add them to my salads, swap out potatoes for chickpeas when making breakfast and even have them in place of chicken in this buffalo chickpea salad.

These Peruvian-inspired Grilled Chicken Skewers made with boneless, skinless chicken thighs are juicy and so flavorful topped with a spicy avocado aji verde sauce. The chicken is marinated with beer, Sazon, cumin and spices. The creamy spicy sauce is so good, I’ve been putting it on my eggs, steak tacos, etc. I’ve made these Grilled Chicken Skewers a few times in the past month, and they’ve been such a hit with my family. They are so delicious – the longer you marinate the chicken, the more flavor it will have. Loosely inspired by my favorite Peruvian chicken with green sauce only easy to make all summer on the grill. I like the sauce spicy, so I leave the seeds from the jalapeno in, but you can make it milder by omitting the seeds.

Peaches!! Any way you slice them, I am eating them! To trick to that perfect peach is to find one that is not quite firm to the touch, one that has a little “give” to it. But don’t squeeze too hard- it can bruise the fruit! A ripe peach has a dark yellow color and becomes round as it ripens. Gently wash them under running water and dry with a paper towel before eating or using. If you are a peach lover add these to your meal plan this week; Grilled Peaches With Honey, Grilled Peach and Watermelon Burrata Salad, Grilled Shrimp Panzanella Skewers or Blueberry Peach Crisp and enjoy!

So, you all know I love having fresh fruits and veggies, and the fresher the better! For most of the country, June is prime time for ripe strawberries, and what is better than a red, juicy strawberry! Remember size doesn’t equal sweetness- look for a vibrant red fruit with a green cap. I have quite a few strawberry recipes- from something as simple as Strawberries and Cream, or 3 Ingredient Strawberry Romanoff, to a fancier dessert like Chocolate Crepes with Strawberries.
