Independence Day Sandwich Style

In honor of July 4th, we bring you sandwiches from the Original 13 States, with a modern twist! Our friends at Sandwich America and USA Today 10Best have identified the top sandwiches from the Original 13 States, based on consumer voting. So, sit back, wave a flag and enjoy the 4th—sandwich style! 

1. Connecticut - Chicken Parm Sandwich

That's right, the Chicken Parm Sandwich is the most popular in Connecticut. A fun twist on the Italian classic, The Food Channel has a great Chicken Parmesan Panini.

Fun Colony Fact: The Connecticut Colony was home to the Battle of the Frogs! Believing they were under attack, settlers sought out the source of the noise they heard, only to find it was thousands of frogs fighting for the last pond in town. 

2. Delaware - The Soft Shell Crab Sandwich

Fun Colony Fact: the Delaware Colony was the first of the Original 13 colonies to ratify the Federal Constitution. 

3. Georgia - The Fried Chicken Sandwich

Fun Colony Fact: A chicken sandwich today isn't far from what was enjoyed back then. The Georgia Colony was the first with a dominant warm climate and land, so crops and livestock thrived year round! 

4. Maryland - The Crab Cake Sandwich

Fun Colony Fact: The Original Maryland Colony had a lot more land than it does today as a state. It originally covered 12 million acres, today it is approximately half of that

5. Massachusetts - The Lobster Roll 

In a delicious twist of fate, the people of Massachusetts have decided The Lobster Roll is their top choice. Fun Colony Fact: Massachusetts, a state of firsts, is responsible for the first Thanksgiving in 1621, the first University in 1636, and the first Revolutionary War Battle in 1775. 

6. New Hampshire - The Monte Cristo

A sandwich too good to ignore, New Hampshire has chosen the Monte Cristo as its best. Smoky-sweet griddled country ham, melted fontina cheese, and a delicious maple syrup—what's not to like? Here's our New Hampshire Maple Monte Cristo Sandwich recipe.

Fun Colony Fact: New Hampshire's motto is "Live Free or Die" in reference to early settlers' determination to declare independence from the Massachusetts Colony. 

7. New Jersey - The Italian Hoagie

Fun Colony Fact: From 1666-1702, The Garden State was originally divided into East Jersey and West Jersey, each with its own constitution and an ever-changing border. 

8. New York - Bagel & Lox

Fun Colony Fact: The New York Colony was referred to as the "Breadbasket Colony" because it's major crop was wheat, which was ground into flour and exported to England. 

9 & 10. North Carolina and South Carolina - The BBQ Pork Sandwich

Fun Colony Fact: In 1587, the North Carolina Colony completely vanished. The cabins were gone, livestock disappeared and the only thing remaining was the word "CRO ATON" carved onto a post. It was then dubbed, "The Lost Colony." 

11. Pennsylvania - Cheesesteak Sandwich

Did anyone think Pennsylvania's top sandwich wouldn't be the cheesesteak? It's a Philadelphia classic! Try our version, with shaved rib-eye steak, fresh bell peppers, and melted provolone cheese. 

Fun Colony Fact: Pennsylvania was home to some very influential colonists, such as Benjamin Franklin, a founding father and future president, and Thomas Paine, who invented the phrase 'United States of America.'

12. Rhode Island - The Grinder

The top sandwich in the state of Rhode Island is The Grinder, which can be anything reminiscent of a sub sandwich, or hoagie, but one thing it does have to be is appetizing! Give our Grilled Meatball Grinder a try. 

Fun Colony Fact: Rhode Island's motto is "Hope" and its founder Roger Williams was one of the only founders who paid the Native Americans for their land, as he believed it was the right thing to do. 

13. Virginia - Country Ham Sandwich

Fun Colony Fact: The Virginia Colony was also home to many important political figures in American history, including 4/5 of America's first five presidents including George Washington, Thomas Jefferson, James Madison and James Monroe.

Ingredients

1.55 ounce box Summer Berry Punch gelatin
3 ounce box Berry Blue Jell-O
3 ounce box Strawberry Jell-O
Cherries
Lemon
Water

Preparation

Prepare each box of gelatin according to package directions - keep the amount of boiling water the same but reduce the amount of cold water added by half.
Place small pieces of cherries and lemon into silicon molds or silicon ice cube trays.
Pour jello into silicon molds or silicon ice cube trays and freeze until solid (at least 4 hours).
Carefully remove frozen jello ice cubes and place in a glass.
Top with lemon-lime soda or ice cold water.

Six Unique Rum Cocktails For Summer!

At The Food Channel, we're always keeping an eye on trends in food and beverage. Cocktails featuring rum have long been popular in the U.S., but it seems the desire for rum-inspired cocktails is reaching new creative peaks.

According to imbibemagazine, the rising interest may be, in large part, driven by bartenders looking for interesting and unique flavor combinations.

Our consumer behavior and insights partner, CultureWaveshas been exploring the trend of creating experiences around food and beverage, as opposed to them being in a supporting role, for some time. Cocktail enthusiasts, whether it's those who create or those who imbibe, have become more knowledgeable about ingredients and style, leading to continual growth and exploration.  

When our editorial team saw a recent cocktail feature on Forbes, we knew we had to share. Below are the Top Six Rum Cocktails For Summer, as identified by Forbes contributor Nick Passmore, followed by some of our Food Channel rum-inspired favorites. 

Basil Berry Mojito

Ingredients: 

2 parts Cruzan Aged Light Rum

1 part Cruzan Strawberry Light Rum 

Juice of one whole lime

4 slices fresh strawberry

4 whole fresh basil leaves

Soda water

Black pepper

Method:

Muddle basil with strawberries, simple syrup, and lime juice. Fill with ice and add remaining ingredients and top with ice. Top off with soda water, garnish with a small basil leaf and fresh ground pepper. 

Bacardi Tropical Rum Punch

Ingredients:

8 parts Bacardi Banana Rum

4.5 parts Bacardi Superior Rum

4 parts coconut cream - whisked

5 parts orange juice

4 parts lemon juice

3 parts simple syrup

Method:

Add all ingredients into a punch bowl with an ice block. Garnish with orange slices.

Afro-Rita

Ingredients: 

2 oz Afrohead Briland 07 Rum

1 oz lime juice

1 oz agave syrup 

Method:

Shake and strain all ingredients into rock glass, garnish with lime wedge. 

The 1934

Ingredients:

2 parts Havana Club Añejo Clásico

3/4 parts Martini & Rossi sweet vermouth

1/2 part Amaro

2 dashes orange bitters

Method:

Stir all ingredients vigorously with plenty ice until very cold, strain into a rocks glass with an ice sphere. Garnish with an orange peel.

Rum Cocktail from NYC's The Modern

Ingredients:

2 oz El Dorado Three Year Rum

3/4 oz fresh lime

3/4 oz toasted coconut syrup

Angostura Foam

Turmeric

Method:

Combine the first three ingredients and shake with ice. Pour into a coupe glass and top with Angostura foam and sprinkle with turmeric.

Thy Neighbor's Wife

Ingredients:

1.5 oz Havana Club Blanco Rum

1 oz Velvet Falernum

.25 oz Green Chartreuse 

.5 oz Rosemary Maple Syrup 

1 lime 

2 dashes orange bitters

Method:

Serve shaken with a lime twist.

Grilling mackerel on an outdoor grill brings out its smoky, rich flavor. Because this fish is oily, keep it simple and season with salt and lemon juice. Included is a recipe for a 7-grain tabbouleh side dish.

Ingredients

2 x fresh mackerel, gutted
Sea salt
Juice of 1 lemon
For The 7-grain Tabbouleh:
6 tbsp 7-grain mix, cooked and cooled
1/3 large cucumber, diced
1 beef tomato, seeded and diced
1 small bunch parsley, finely chopped
2 tbsp olive oil
Sea salt
Juice of 1 lemon

Preparation

You want the BBQ to be burning hot and bright, with the grill fairly close to the coals. If you are only cooking fish, then it does not need to burn for that long. So, you could use lump wood charcoal.
Slash the mackerel on both sides (as shown in the video) and season with the salt and the lemon.
Lightly oil the grid of the fish holder and enclose the fish.
Grill the fish for about 10 minutes on each side, until the flesh comes away cleanly from the bone. Timing on the BBQ is very much an individual affair.
To make the 7-grain tabbouleh, mix all of the ingredients together.
Serve the hot fish with the grain salad, perhaps some grilled corn cobs and warm pita.

Ingredients

2 tablespoons butter, melted
2 1/2 cups low-sodium fat-free chicken broth
1 cup Arborio rice
1 cup chopped onion
Salt and pepper to taste

Preparation

Preheat oven 400 F°
In a 13x9x2-inch baking dish, mix together butter, broth, rice, onion and season to taste. Bake, covered, 35 minutes. Remove from oven and fluff rice with a fork.

Ingredients

3 tablespoons sesame oil
3 tablespoons honey
1 tablespoon low-sodium soy sauce
1 teaspoon garlic powder
4 cups honey nut toasted rice and corn cereal squares
6 cups mini pretzels
1 cup dry roasted peanuts
1 cup candy-coated chocolate pieces

Preparation

Preheat oven 250°F. Line baking pan with foil.
In a small bowl, whisk together sesame oil, honey, soy sauce, and garlic powder.
On prepared pan, combine cereal squares, pretzels, and peanuts. Add oil mixture and toss with cereal mixture. Bake 25 minutes, stirring once.
Turn off oven and remain in oven 1 hour to continue crisping. Cool completely and toss with chocolate candies. Store in an airtight container.

Made entirely on an outdoor grill, this Peri Peri Chicken uses a delicious blend of South African spices, including the bird's eye chili that gives the chicken its signature heat. You will need to know how to spatchcock a chicken, watch the video below for tips!

This Peri Peri Chicken is served with a creamy coleslaw and, made in a separate recipe, traditional South African braai broodjies. Thanks to the chefs at Rattan Direct for this great recipe.

Ingredients

1 small chicken of roughly 2lbs
For The Sauce:
1 pointed red pepper
4 birds eye chilies
1 tbsp. paprika
4 cloves garlic
1 tsp salt
Juice of 2 large lemons
2 tbsp. olive oil
1 tsp sugar
1 sprig fresh oregano
3 tbsp. red wine vinegar

Preparation

Light the barbecue coals and immediately place the pepper in the flames. You want to set up so you have a cool section of the grill with no coals underneath.
Blacken the pepper, turning on all sides, and remove from the flames over to the cool side.
Add all of the ingredients to a saucepan suitable for using over the coals.
Once the flames have died down and the coals are white, place the saucepan over the heat.
Let the contents bubble.
Strip the flesh from the pepper and add it to the pan. Cover and simmer for about 10 minutes whilst you spatchcock the chicken.
To spatchcock a chicken flat for the grill, you need to cut out the backbone with a sharp heavy knife. Holding the chicken with its back towards you, and breast facing forward, cut down one side, and then the other. You can watch how this is done in the video. Turn the chicken over, give it a bash to flatten out and then slash all over.
Blend the sauce and rub it all over the chicken.
The coals should now be cool enough to cook the chicken, although with the sauce it may still be prone to burn over the direct heat. Move it around, sometimes over the cool area, and keep the lid closed.

The Food Channel keeps an eye on trends in college food service, as food and beverage offerings must be top-notch to keep students engaged and on-campus. What does it take to thrive as a college restaurant? Here's a look at ten legendary locations, from our friends at FSR Magazine

University of California at Berkeley: Cheese Board Pizza

The key to Cheese Board Pizza? It's delicious. On any given day you'll find a line out the door with everyone waiting to eat the exact same pizza. That's right, they serve one type of pizza every day and it's always vegetarian! For example, a pizza made with roasted cauliflower, roasted onions, cheddar cheese, mozzarella, pistachios and garlic olive oil. 

University of Arizona: Frog & Firkin

A pub in Tucson, Frog & Firkin is known for deep-dish pizza. Students swear it's absolutely delicious, but the pub also makes food fun. Pizza isn't complete without a side of fries and patrons can choose from red, white, green or yellow. Each color has a corresponding ingredient topping, ranging from herbs to Parmesan cheese to pizza sauce to mozzarella. 

University of Texas at Austin: Kerbey Lane Cafe

The main point of interest on the menu at Kerbey Lane? The Kerbey Queso: guacamole topped with white queso and Pico de gallo. It's an all-day favorite with Austin students. 

University of Wisconsin: Mickies Dairy Bar

As FSR attests, enjoying food at Mickies Dairy Bar before a football game is a rite of passage. The restaurant has been serving students since the 1940s, keeping the quaint diner feel alive and well, with things like a handwritten menu on the wall and signature "Scrambler" dish. 

Harvard: Mr. Bartley's Burger Cottage

A Harvard Square staple since the 1960s, lines out the door still continue to wrap the block. The burger names are... inventive and typically based on pop-culture artists, athletes, or phrases. For example, the "Tom Brady "Triumphant"" burger contains cheddar cheese, guacamole, tomato and red onions. The "Legalize It" burger comes with marinara sauce, mozzarella, mushrooms, and onions. 

University of Colorado: The Sink

The Sink is a bit more famous than others, with celebrities and students alike entering its doors. Known for "The best darn burger in Boulder" and its "Ugly Pizza," which has honey baked into the crust; The Sink continues to thrive. 

Georgetown: The Tombs

Located in a townhouse that dates back to the 1850s, The Tombs opened its doors in the 1960s and continues to serve students nightly. With happy hour specials and late night menus, The Tombs is actually included in the Georgetown campus meal plans. 

University of North Carolina: Top of the Hill

Top of the Hill is the self-proclaimed "social crossroads" of the city, having garnered the trendy name TOPO by locals. Doubling as a brewery, all beers are brewed on-site, and outdoor and indoor games are aplenty: foosball, dartboards, and pool tables. 

Purdue: Triple XXX Family Restaurant

This diner has long-standing roots. Having been around since the 1920s, the pure cane sugar root beer is a recipe that can be traced back to 1895. The famous food? It's called the Duane Purvis All-American Burger, containing very normal ingredients until you realize... there's peanut butter on it. 

Penn State University: Waffle Shop

The Waffle Shop has been operating since the 1970s, and on game days, you can find a line out the door. This can be attributed to their large portion sizes of fresh Belgian waffles, Iowa corn pancakes, and french toast.

Skinnytaste Dinner Plan (Week 80). So the official start of summer is finally here!! I hope everyone is having a great one so far! I’ve read all your comments and it looks like the meal plan is here to stay, I’m glad you all find them helpful!

Pictured below is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. If you would like to see some of the previous week’s dinner plans, click here
