Bittersweet chocolate delivers a deep and indulgent chocolate flavor to these luscious Chocolate Almond cookies. They make a wonderful holiday gift, too.
Why Try? The better the chocolate, the better the cookie. We used bittersweet chocolate to make these Chocolate Almond cookies.

You must roll chocolate almond cookie dough balls in the palms of your hand; a bit messy but well worth the effort.
Ingredients
8 ounces bittersweet chocolate, finely chopped
1 cup blanched almonds, toasted
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon coarse salt
1/2 cup unsalted butter, softened
1 cup packed light brown sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup sugar
1 cup confectioners' sugar
Preparation
Preheat oven to 350ºF.
In a double boiler melt chocolate. Let cool slightly.
In a food processor, pulse almonds until finely chopped. Combine almonds in a bowl with flour, baking powder, and salt.
In a separate bowl, beat butter and brown sugar with an electric mixer until fluffy. Add eggs and vanilla. Mix in chocolate and add almond flour mixture. Cover and chill for 1 hour.
Shape dough into 1-inch balls. Roll in sugar to coat, then in confectioners' sugar. Arrange on parchment lined baking sheets.
Bake 15-20 minutes or until surface cracks and let cool.
