Loaded Nachos with Ground Turkey, Beans and Cheese

These Loaded Nachos with Turkey, Beans and Cheese are made with baked tortilla chips, lean ground turkey, black bean dip, cheese and pico de gallo.

Cinco De Mayo, or any day with these healthy loaded nachos loaded with protein and fiber. Using lean ground turkey mixed with flavorful black bean dip, this lighter recipe takes a classic appetizer that’s usually over 1200 calories in most chain restaurants, and makes them under 400 calories. I have hundreds of ground turkey recipes, it’s my favorite protein to use to lighten up some of my favorite dishes! Air Fryer Steak

Make perfect Air Fryer Steak that is seared on the outside and juicy on the inside. Air frying steak is quick and easy with no splatter or mess in the kitchen!

Through trial and error, I learned some tips to make perfect air fryer steaks. Here I used leaner sirloin, but this will work for any steak you like. I do recommend making sure your steaks are at least 1 inch thick. Thinner steaks cook too fast without getting a chance to brown. A little oil rubbed on the steaks helps the steaks brown better. Adding a dry rub to leaner steaks like this sirloin or chops helps with overall color. We usually eat it with baked potatoes, smashed potatoes, or mashed potatoes and a vegetable, like roasted green beans or asparagus. You can see more air fryer recipes here.

Move over fish florentine, meet my new fish obsession!! I ate my weight in blackened fish while in the Florida Keys, always ordering the catch of the day. Most days, I had fish fish tacos, but I really enjoyed a blackened fish dish with key lime tartar sauce and wild rice that I had one night for dinner. Since I got home, I’ve been thinking about that meal, so I knew I had to recreate it ASAP! The tartar sauce came out perfect!! I usually to make this light ranch dressing from scratch but of course, to save time you can buy it bottled. This Ginger Scallion Fish recipe uses barramundi, also known as Asian sea bass, a firm, moist fish with a sweet, buttery flavor, but it would work well with any similar white fish like cod or halibut. It cooks in about ten minutes under the broiler and then is slathered with the ginger scallion sauce. Mushroom Risotto is creamy Italian rice dish made with Arborio rice and loaded with mushrooms. A vegetarian dish that is comfort in a bowl!

Although risotto can be a little time consuming, it’s so worth it! It’s not complicated, it just requires attention as you need to slowly stir in the stock, let it absorb, stir in some more and repeat until it’s tender. I used Baby Bella (crimini) mushrooms, but you can use portobella, porcini, shiitake, white button or a combination of all four. If you’re not a fan of mushrooms, try this Asparagus Risotto, Butternut Squash Risotto, Creamy or these Seared Scallops over wilted Spinach and Parmesan Risotto.
