I’m a sucker for pies, crisps and cobblers. There’s something about eating a hot gooey crisp with a cold scoop of vanilla frozen yogurt cream that really does it for me!! Delicious served warm out of the oven. For a Fall fruit crisp, you make also like this Cinnamon Apple Crisp.

Whipped Ricotta Toast with Roasted Tomatoes on crusty bread and topped with garlicky tomatoes, shallots, and basil is the perfect way to enjoy fresh summer tomatoes.

Whipped ricotta is so decadent yet so simple to make. It’s delicious on a thick slice of toasted bread. I add roasted garlic, salt, and pepper to the ricotta and then mix it all up in my food processor. It is the best whipped ricotta. I then spread a thick layer on a slice of baguette and top it with roasted tomatoes, shallots, and basil. For some other easy toast ideas, try my Hummus Avocado Toast and Avocado Crab Toast.

These 3-ingredient Raspberry Yogurt Popsicles are such a cool and refreshing summer dessert. I macerate the fresh raspberries with a little organic cane sugar to release their juices. Cauliflower Gnocchi

This delicious Cauliflower Gnocchi is made with cauliflower instead of traditional potatoes. No need for a Trader Joe’s run – make them from scratch with just three ingredients!

Is there anything cauliflower can’t do? I use it as a low-carb alternative to make low-carb rice, low-carb potato salad, cauliflower mashed potatoes, and low-carb macaroni and cheese. And here, it’s amazing as gnocchi topped with marinara and Parmesan cheese. This healthy cauliflower gnocchi is lower in carbs and calories than traditional gnocchi and a great way to eat more cauliflower! Well guys, I want to thank you for all your patience this week, but unfortunately I am going to have to ask you for little bit more! I STILL have no internet, WiFi, or television! It is driving me crazy lol!! I am hoping it will be fixed in the next few days, a hot spot just isn’t cutting it! Until then check out some kid friendly recipes and cook them their favorites before school starts! (whether in person or virtual!) I also will not be able to post a print option at this time- I will add that as soon as I can!
