In honor of Valentine’s Day, Chef Roger Waysok of downtown Chicago’s South Water Kitchen will be preparing special Red Velvet Churros e with Bourbon-Cream Cheese Glaze for guests the weekend of February 14.

Ingredients
2 cups water
4 tablespoons brown sugar
1 teaspoon salt
1 cup butter
2 cups white flour
2 teaspoons cocoa powder
2 tablespoons red food coloring
4 eggs
2 teaspoons vanilla extract
1 cup sugar
1 vanilla bean
Bourbon-Cream Cheese Glaze:
5 ounces cream cheese
3/4 cup confectioner's sugar
1 teaspoon vanilla extract
2 teaspoons bourbon
3 tablespoons whole milk
Preparation
In a bowl, mix sugar with one split vanilla bean.
Cover and set aside; sit overnight if possible to allow the vanilla to flavor the sugar.
In a separate bowl mix the flour, cocoa powder and salt; set aside.
In a sauce pan add water, brown sugar and butter; bring to a boil.
Remove from heat and mix in flour mixture until well blended.
In a separate bowl, mix eggs, food coloring and vanilla extract; add this mixture to the flour mixture.
Stir until well blended.
Fill a pastry bag, fitted with a large star tip, with the churro dough.
Preheat oil to 375 degrees.
Once the oil is ready, pipe dough into oil; about 4 inches long.
Cook for about 1 minute, turn with tongs and cook for an additional minute or until golden brown.
Remove churros from heat and place on paper towel to soak up extra oil.
While still warm, roll each churro in the vanilla and sugar mixture made in step one of this recipe.
For the Bourbon-Cream Cheese Glaze:
In a mixer beat cream cheese until soft.
Add sugar; mix until well combined.
Add vanilla and bourbon; mix until combined
Add milk, 1 tablespoon at a time, until desired thickness is achieved.
