Roast Turkey Pan Gravy with Cider

Ingredients

Pan drippings from 12-pound roasted turkey
1/4 cup flour
3 cups turkey stock or chicken broth, warm
1/2 cup apple cider
Kosher salt and black pepper to taste

Preparation

Remove turkey from roasting pan.
Spoon off excess fat in roasting pan, if desired.
Place roasting pan with pan drippings on stovetop burner over medium-low heat; add flour and whisk for two minutes, or until bubbly.
Add 1 cup turkey stock or chicken broth and whisk until fully blended and gravy begins to simmer.
Slowly add remaining liquid and apple cider; simmer until liquid has reduced and gravy has thickened.
Strain gravy into a saucepan to remove browned bits, if desired.
Season to taste with salt and pepper.
Keep warm.
