Pickled Red Onions are simply delicious and great for the holidays. This colorful condiment goes together quickly and adds lots of contemporary flavor to the modern relish tray. Dried pickling spice, available in the spice aisle of your grocery store, adds the distinct flavors of mustard seed, allspice, crushed red pepper and bay leaf to recipe. You can eliminate the pickling spice in the recipe for a versatile pickled red onions topping for sandwiches, salads and grilled burgers.

Pickling is right on trend. It serves to preserve the life of food as well as giving a unique flavor experience.
Ingredients
1 red onion
1 cup white wine vinegar
1/2 cup water
2 tablespoons white sugar
1 teaspoon pickling spice blend (optional)
1/8 teaspoon kosher salt
Preparation
Peel and thin-slice red onion.
Combine vinegar, water, sugar, pickling spice and salt in nonreactive saucepan.
Simmer over low heat until sugar is dissolved.
Remove from heat.
Using tongsm add red onions to vinegar mixture and stir until onions are completely covered.
Cool.
Transfer pickled onions to mason jar or glass bowl and pour pickling liquid over onions.
Cover and refrigerate.
