Broccolini, also known as broccolette or broccoletti, is actually a cross between broccoli and Chinese kale. I's lightly sweeter than broccoli and is nutrient-dense. It's a delicious alternative to broccoli and perfect as a holiday side dish sure to draw "Ahhh's" galore!

Foodie Byte
All of the broccolin is edible, including the occasional yellow flower found at the tips. It's high in Vitamin C and other nutrients.
Ingredients
2 bunches broccolini
1-2 large shallots, minced
3/4 lb. fresh mushrooms, assorted, sliced
3 tablespoons olive oil
Kosher salt, as needed
Black pepper, as needed
1/4 cup white wine
American Grana Cheese or Parmesan, shredded, as needed (optional)
Preparation
Blanch the broccolette: In a medium stock pot, boil water and place raw stalks into the water for 2 to 3 minutes, or until tender-crisp. Remove with a slotted spoon or tongs and place into an ice bath to stop cooking. Drain.
In a large skillet over medium heat sauté shallots in olive oil, add mushrooms and continue to sauté until mushrooms are golden and starting to caramelize.
Season with salt and pepper.
Add white wine and simmer until liquid has reduced.
Add broccolini and toss to blend.
Top with American Grana or Parmesan cheese, if desired.
Serve warm.
