Triple Nut Cookies are one of our favorites in this series because of the great flavor and texture. Sit down with these and a cup of hot mocha for a little bit of holiday cheer!
This recipe is part of our Countdown to Cookies for the 2015 holiday season.
Foodie Byte
Be sure to use a good quality vanilla for maximum flavor.
Ingredients
1/4 cup butter, softened
1/2 cup brown sugar
1/2 teaspoon vanilla extract
1 egg
1/4 teaspoon salt
1/2 teaspoon baking powder
1 1/2 cups almond meal
1/2 cup chopped English walnuts
1/4 cup pecan halves
Preparation
In a large mixing bowl, cream butter and sugar together.
Mix in vanilla extract and egg.
Add in salt, baking powder and almond meal.
Fold in chopped walnuts.
Cover and chill for at least 30 minutes.
Preheat oven to 375°F.
Scoop out dough into 1-inch balls, place on a parchment lined baking sheet 2-inches apart.
Press pecan half in the center of the ball, just enough that it gently sinks into the cookie but remains on top.
Bake 8-10 minutes, let cool for two minutes before transferring to wire rack.
