Most of us know the word Festivus from the Seinfeld episode from the 90s, but it is actually Latin for festive, originating as "Festus," meaning joyous or jubilant. The colors of this dish enhance that meaning and makes for a deliciously colorful dish on your taste buds as well. If basil is not your thing, try using fresh spinach.
If you have trouble finding the four-veggie blend, which is also called Rainbow Salad or Slaw, you can make your own. It's a blend of shredded carrots, purple cabbage, heart of cauliflower and small broccoli florets totaling about 4 cups.

Ingredients
12 ounces four-veggie blend
Small buttercup squash (about 2 - 2 1/2 pounds)
3 tablespoons olive oil
3 tablespoons brown sugar
1/2 teaspoon salt
1/2 teaspoon Chinese 5-spice powder, optional
1/4 teaspoon black pepper
1/2 small onion, peeled and minced
1/2 teaspoon minced garlic in oil
2 ounces (a small handful) fresh basil leaves
Preparation
Cut squash in half from stem end to bottom.
Turn cut-side down and slice in 1/2-inch wide slices.
With a paring knife or steak knife, cut seeds and pith from center and skin from the outside.
Dice into 1-inch square pieces.
In a large saucepan over medium-high heat, add the olive oil, onions and minced garlic.
Cook until onions are starting to soften, about 2-3 minutes.
Add the squash and cook 3-4 minutes, or until starting to soften.
Add veggie blend and brown sugar. Stir to combine, cover and cook until broccoli is softened, stirring frequently; about 4-5 minutes.
Remove cover, add basil leaves, stir to blend and continue cooking and stirring for 2-3 minutes, or until the basil is wilted.
Remove from heat, season to taste with salt and black pepper and serve immediately.
