Matcha Madeleines are one of the more beautiful cookies in this series, with a glossy sheen and an unusual flavor. We've taken the traditional Madeleine and dressed it up even more!
Makes 8 to 10 cookies.

Madeleines require a special pan with shell-shaped depressions for baking.
Ingredients
1/4 cup butter, melted
2 eggs
1 teaspoon vanilla extract
1/2 cup flour and more for molds
1 teaspoon matcha powder
1/3 cup sugar
1/4 teaspoon salt
GLAZE INGREDIENTS:
1 cup powdered sugar
2 tablespoons milk
1 tablespoon melon syrup
Cheesecloth
1/2 cup milk
Preparation
Preheat oven to 375°F.
Let melted butter rest until it reaches room temperature.
In a medium mixing bowl combine salt, eggs, and vanilla extract at beat on high until light.
Continue beating, and slowly add in sugar. Beat on high until soft ribbons appear.
Slowly add in flour, quarters at a time.
Add in matcha powder.
Once all ingredients are all integrated, pour butter around the wall of the batter and gently beat in, batter should end up being glossy.
Cover and refrigerate for at least 30 minutes.
Grease Madeleine pan with butter by hand, and add a dusting of flour.
Fill Madeleine shells halfway with batter, it will spread during baking.
Bake 14 minutes.
Upon removing from oven, they should be firm and springy, and should have domed over on the back. This will deflate during cooling.
TO MAKE THE GLAZE:
Place powdered sugar in a mixer, add milk and melon syrup, beat together.
Using a cheesecloth, dip it into the ½ cup milk and then into the frosting, brush on cooled Madeleines.
Dipping the cheesecloth again in milk, begin to remove the frosting until all that is left is a thin layer that is deeply visible in the crevices of the Madeleine itself.
