Hungarian Poppy Seed Cookies are ethnically-inspired with a huge pop of savory flavor from the poppy seed. It's an unexpected holiday cookie that looks as good as it tastes.

Fresh poppy seed is available in most specialty spice aisles.
Ingredients
1/2 cup butter, softened
1/2 cup granulated sugar
1 egg
2 teaspoons lemon zest
1/2 teaspoon baking soda
1/2 teaspoon ground cloves
1 1/2 cups all-purpose flour
3/4 cup poppy seed pie filling
Preparation
In a medium size mixing bowl, cream butter and sugar together.
Mix in egg and lemon zest.
Add baking soda and cloves.
Slowly mix in flour.
Roll dough between two sheets of waxed paper into a 1/4-inch thick rectangle approximately 12x10 inches.
Chill for 30 minutes.
Preheat oven to 350°F.
Remove top layer of wax paper.
Beginning at the 12-inch side, evenly spread poppy seed filling across the rectangle of dough, leaving approximately ¼ inch border of empty dough around the edges
Roll tightly, peeling off the back of the wax paper as the dough is rolled.
Once rolled, cut into ½-inch slices and place 1-inch apart on a parchment lined baking sheet.
Bake 10-12 minutes, let cool for 2 minutes and then transfer to wire rack.
