Green Beans with Figs and Pears

Be sure to put the pears on to blanch immediately after slicing them, so they don't brown. Do not slice the third pear until you are ready to plate the side dish. Otherwise, you should sprinkle your pears with citrus juice to preserve the color.

Ingredients

1 lb. fresh green beans
1/2 lb. bacon
1 jar (8.5 ounces) fig preserves
3 Anjou pears
2 tablespoons champagne vinegar
4 ounces chopped pistachios

Preparation

Slice fresh pears.
Boil 8 cups of water in a pot and place 2/3 of the pears in the boiling water for 3-5 minutes.
Blanch the green beans by adding them to the same pot of boiling water, with the pears, for another 3-5 minutes.
Remove beans and pears from the water, using a slotted spoon, and set them to cool.
Meanwhile, chop the bacon into about 1-inch pieces.
In a frying pan over medium heat, fry the bacon, removing the grease as you go so it does not accumulate.
Once bacon is fully fried, remove it from the heat and drain remainder of grease, leaving the bacon in the pan.
To that pan, add in 2/3 of the jar of fig preserves, stirring it in to create a caramelized effect on the bacon.
Add the champagne vinegar to the pan.
Return the pan to low heat and add in the pears, green beans, and remainder of fig preserves, tossing while pan remains on low heat, for 3-5 minutes or until everything is nicely coated.
Plate the beans, using the remainder of the fresh, sliced pears as a garnish and adding the pistachios to finish the dish.
