Quinoa Holiday Bars

Quinoa Holiday Bars are a protein and fiber-rich cookie that will satisfy your desire for health mixed with holiday fun!

This recipe is part of our Countdown to Cookies for the 2015 holiday season.

These bars pair well with hot chocolate or tea to add a little moisture.

Ingredients

1/2 cup unsalted butter, softened
2/3 cup sugar
1/2 cup light brown sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 large eggs
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup cooked quinoa, cooled
1 2/3 cups white flour, divided
1 teaspoon salt
1/2 cup dried cranberries
1 cup old-fashioned oats
1/2 cup slivered almonds
2 tablespoons ground cinnamon (including more for dusting)

Preparation

Preheat oven to 375°F.
Cream butter and sugars together.
Add in vanilla and almond extracts.
Mix in eggs, baking soda and baking powder.
Add in cooled quinoa and oats.
Mix in 1/3 of the flour.
Add almonds.
Mix in another 1/3 of the flour.
Add cranberries.
Add cinnamon and mix in final 1/3 of the flour.
Line a 9x9 baking pan with aluminum foil.
Evenly spread batter across the pan
Bake for 22-24 minutes, until top begins to turn golden brown
Once finished, dust the top with a generous sprinkling of cinnamon
Pull up on foil and remove, cut into 1-inch by 4-inch bars
