Coconut Pandan Cookies

The Coconut Pandan Cookie is an ethnically-inspired cookie that is naturally green in color and fun to mix in with your more traditional holiday desserts.

Pandan is one of the ethnically-inspired flavors identified during our research for the Top Ten Food Trends for 2016. It's made from a tropical plant and is commonly used in Southeast Asia as a flavoring--and, yes, it's green. No artificial food coloring here, and you can get the greens of Christmas!

This recipe is part of our Countdown to Cookies for the 2015 holiday season.

Another great natural color comes from the ube, also known as the purple yam, or sweet potato.

Ingredients

1/2 cup butter, softened
1 cup sugar
2 teaspoons pandan (or ube for a flavor variant) extract
1 cup flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
FOR FROSTING:
1/2 cup cream of coconut
2 cups powdered sugar

Preparation

Preheat oven to 375°F.
Cream butter and sugar together, and add in pandan or ube extract.
Add in baking soda and salt, mixing well and add in egg.
Mix in flour, and continue beating until color of batter is smooth and consistent, pandan will be bright green, and ube a deep purple.
On a parchment lined baking sheet, scoop out 1-inch size spoonfuls of dough and place 3-inches apart.
Bake for 10 minutes, transfer to cooling rack before frosting.
TO MAKE FROSTING: Combine ingredients and mix well.
