Tropical Island Drop Cookies

Be sure to toast both the macadamia nuts and the coconut before putting in--while it's technically optional, you'll enjoy the nuttier flavors that toasting brings out.

Ingredients

2 cups flour
1 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
1/4 teaspoon vanilla
1/2 teaspoon almond
1/2 cup maraschino cherries, drained and chopped
1 can crushed pineapple, packed in juice, not syrup
1 cup coconut
1 cup chopped roasted macadamia nuts

Preparation

Preheat oven to 375 degrees.
If desired, spread coconut on a baking sheet and toast it in the oven until barely golden brown; remove from oven and set aside.
If desired, spread macadamia nuts on a baking sheet and toast in the oven until golden brown; remove from oven and set aside.
Mix flour, baking powder, baking soda, and salt; set aside.
Cream butter and sugars.
Add egg.
Add vanilla and almond.
Add flour mixture.
Fold in pineapple (drained), coconut and macadamia nuts.
Drop onto a cookie sheet lined with parchment paper and bake 8-10 minutes.
Remove from oven and let cool.
