We experimented with baking these longer and got a lovely, crunchy cookie, so consider these no fail! We used chocolate chunks but you can also rough chop bittersweet chocolate.
Ingredients
2 eggs
1/2 cup butter
2 tablespoons buttermilk
1 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 cup granulated sugar
3 tablespoons cocoa powder
1 1/2 cups flour
1 teaspoon vanilla
1 cup pistachios
1/2 cup chocolate chunks
kosher salt
Preparation
Preheat oven to 350 degrees.
Mix butter, sugar and cocoa powder together.
Add dry goods: baking powder, baking soda, sugar, cocoa powder, flour.
Add rest of ingredients and mix well.
Drop onto cookie sheet covered with parchment paper and bake for 12 minutes. Cookies will be soft.
Remove from oven and immediately sprinkle with kosher salt.
Let cool before serving.
