These cookies are excellent used in place of marshmallows or whipped cream on hot cocoa! Just drop one on the hot milk and let it melt, then savor the peppermint flavor!
Ingredients
3 large eggs, divided (you will use only the whites so set the yolks aside to use at another time)
1/2 cup sugar
1/4 teaspoon salt
1/2 teaspoon cream of tartar
1 teaspoon peppermint extract
red food coloring
Preparation
Preheat oven to 300 degrees.
Beat egg whites and sugar together until peaks form.
Add salt and cream of tartar and continue to beat until peaks are stiff.
Add peppermint extract and a few drops of food coloring.
Swirl until you have either a marbled red color or a full Christmas red - your choice.
Drop cookies onto a cookie sheet covered with parchment paper and bake slowly at 300 degrees for 25 minutes.
Remove from oven and let cool.
