Baking Powder Biscuits with Blackberry Thyme Butter

The key to making featherlight biscuits is minimal handling of the flaky, crumbly dough. They're unbelievably easy to make, bake in minutes and are a perfect addition to a hearty breakfast, savory dinner or an afternoon snack.

The amount of biscuits you make will depend on the size of biscuit cutter you choose to use and the thickness.

Ingredients

For the biscuits
2 cups all purpose flour, plus more for dusting
2 1/2 tablespoons granulated sugar
4 teaspoons baking powder
1/2 teaspoon cream of tartar
1/2 teaspoon kosher salt
1/2 cup vegetable shortening
1 egg, beaten
2/3 cup whole milk
For the butter:
1 cup unsalted butter, room temperature
1/3 cup blackberry preserves
1 teaspoon thyme, fresh
Pinch of kosher salt

Preparation

Preheat oven to 450°F.
In a bowl, sift together the flour, sugar, baking powder, cream of tartar and salt.
In a separate bowl, whisk together the egg and milk.
Slowly add the milk mixture into the dry ingredients, stirring as you pour until the dough is moistened and well mixed.
Pour the dough onto a lightly floured surface and press evenly with your hands until about 1/2-inch thick.
Use a biscuit cutter and transfer the biscuits onto an ungreased baking sheet.
Bake until biscuits have risen and are golden brown, about 10-12 minutes.
To make the butter: Whip together all the ingredients in the bowl of a food processor.
