Ingredients
1/2 cup granulated sugar
1/2 cup butter
1/2 cup molasses
1 egg
1/3 cup chopped crystallized ginger
2 cups flour
1 teaspoon ground ginger
1/2 teaspoon baking soda
1/2 teaspoon salt
Sanding Sugar
Preparation
Preheat oven to 375 degrees.
Beat first five ingredients until creamy.
Add in flour, ground ginger, baking soda and salt.
Cover cookie sheet with parchment paper.
Drop dough by teaspoons full and sprinkle with sanding sugar.
Bake for 12 minutes for soft cookies.
