Caramel Applesauce Drop Cookies

Go ahead and play a guessing game with a friend--see if they can tell how much these cookies taste like a caramel apple in cookie form! They are excellent slightly warm with a cup of cider, but who ever turned down a caramel apple anytime? These cookies will become favorites because of their easy ingredients and delicious flavor.

We chose walnuts to go with these cookies but pecans or almonds would go just as well, so use what you have on hand.

Ingredients

1/2 cup butter
1/4 cup light brown sugar
1 egg
2 cups flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
pinch salt
1 cup applesauce
2 tablespoon water
caramels
walnut halves

Preparation

Preheat oven to 350 degrees.
Unwrap caramels. Eat one if desired.
Beat butter and sugar; add egg.
Stir in rest of ingredients.
Drop onto cookie sheet lined with parchment paper.
Bake for 10 minutes, then remove from oven and quickly press one unwrapped caramel into the center of the cookie. Don't be afraid to press it down--cracks will be covered once the caramel melts.
Bake an additional two minutes.
Remove from oven and quickly flatten the soft caramel with a butter knife, spreading it over the top of the cookie.
While caramel is still warm, center a walnut half on top.
Let cool before eating--caramel can be hot!
