Fried Potatoes and Onions with Thyme are just the difference you need when considering potatoes for the holidays. This goes perfectly with a ham dinner, and is a beautiful skillet dish. For leftovers, if there are any, throw in some of your ham and make it a main dish.

If Yukons are hard to find or too expensive you can use russet potatoes.
Ingredients
3 pounds Yukon Gold potatoes, cubed
1 large onion, large dice
1/2 stick butter
1 tablespoon Olive oil
1 tablespoon thyme, fresh, chopped
Kosher salt
Black pepper
Preparation
In a large saucepan of boiling, salted water, boil potatoes until just tender, about 10 minutes.
Drain, and then cool. (This can be done one day ahead.)
In a large heavy skillet, melt half of the butter and sauté the onions until just softened, about 3 minutes. Remove from pan and set aside.
In the same skillet, add remaining butter and olive oil. Add in the potatoes and sauté until golden, turning occasionally for about 14 minutes. Add in reserved onions, and fresh thyme, stir over the heat until blended. Season to taste with salt and pepper.
Serve warm.
