Our Veggie Sub pays homage to a little Sub Shop in Springfield, MO where our culinary crew discovered a delicious veggie sub years ago. We don't have their recipe--but they inspired our idea and we thought we'd share it for those of us who can't just pop over and pick one up for lunch. The surprise ingredient is cashew nuts, and when combined with fresh vegetables, it creates a cravable sandwich you'll want to have over and over again. This recipe is part of our Top Ten Sandwich & Salad Trends for 2015.

Ingredients
1 small head green leaf lettuce, sliced
6 slices provolone cheese
red, green and yellow bell peppers, seeded and sliced
½ cup pepperoncini peppers, sliced
½ cup black olives
½ cup whole cashew nuts
Mayonnaise
Italian dressing
Preparation
Spread mayonnaise on bottom of buns.
Layer with all ingredients and drizzle with Italian dressing.
Serve and enjoy.
