Here's a sandwich that takes everything good about caprese and combines it with everything good about grilled cheese--it's a highbrow/lowbrow combo! This is one of the recipes from our Top Ten Sandwich & Salad Trends report.

To "chiffonaide" the basil simply means to cut or shred it finely, as though you were using it for a garnish.
Ingredients
1/2 cup red grape tomatoes, halved
1/2 cup yellow grape tomatoes, halved
1/4 cup Heinz® Balsamic Vinaigrette
1/4 cup fresh basil, chiffonaide
1 teaspoon garlic pepper seasoning
8 slices fresh mozzarella
8 slices sourdough bread
olive oil or butter as needed
Preparation
Combine halved tomatoes, Heinz® balsamic vinaigrette, basil and garlic pepper.
Heat skillet to medium high.
Spread olive oil or butter on both sides of sourdough.
Layer 2 slices mozzarella and top with marinated tomatoes onto bread and close.
Grill both sides until golden.
