This recipe would easily convert to a sandwich by adding bread and making it portable.
Ingredients
For the edamame drizzle:
1 cup edamame, shelled and cooked
1 cup mayonnaise
Juice of 2 lemons
3 tablespoons cilantro, chopped
2 tablespoons green onion, sliced
½ teaspoon Sriracha (or to taste)
Kosher salt, to taste
Black pepper, to taste
1/3 cup Olive oil
For the salad:
4 tempura battered soft shell crabs, cooked according to directions.
4 cups mixed greens
½ cup edamame, shelled
Lemon wedges, as needed
Edamame drizzle
Preparation
For the Edamame Drizzle:
In the bowl of a food processor, combine all ingredients and process till smooth.
Adjust seasonings.
For the salad:
Place greens on a plate and top with soft shell crab, edamame, lemons and drizzle.
