The baking community normally does not necessarily regard donut-making as an easy process . . . no disrespect is meant for those who get up at 3 a.m. to make sure we have fresh donuts everyday.
Ingredients
Vanilla Cake Batter Donut:
4 cups flour
1 cup sugar
4 teaspoons baking powder
1 teaspoon vanilla
1 Tablespoon cinnamon
2 teaspoons nutmeg
2 eggs
1 cup 2% milk
Pinch of salt
Half stick unsalted butter
Chocolate Cake Batter Donut:
3 1/2 cups flour
1 cup cocoa powder
1 cup sugar
4 teaspoons baking powder
1 teaspoon vanilla
1 tablespoon cinnamon
2 eggs
1 cup 2% milk
Pinch of salt
Half stick unsalted butter
Chocolate Drizzle Frosting:
1 stick unsalted butter
1 pound powdered sugar
8 Tablespoons cocoa powder
6-9 Tablespoons buttermilk (more of less, depending on how thick you would like your cream frosting)
Lemon Drizzle:
2 Tablespoons lemon extract
1 pound powdered sugar
up to 1/2 cup 2% milk (poured in a little at a time)
Toppings of choice: sprinkles, nuts, coconut, cereal, chopped candy, etc. or, alternatively, role in powdered sugar or cinnamon sugar
Preparation
Dough Instructions:
Combine all dry ingredients together
Add in melted butter and two eggs in a mixer
While mixing, add in milk; the dough should thicken quickly
Remove from mixer; create a large dough ball and refrigerate for one hour
Once chilled, roll dough into log formation / or roll out and use a donut cutter - if you don't have a donut cutter, cut the chilled log into 1-inch pieces, roll out and cut a small circle out of the middle
Fry Instructions:
Warm 3 inches of oil (or enough to cover) in a traditional fryer at 350 degrees
Place donuts with spare space between each donut into the metal wire basket if using a fryer; if frying in a pan, simply place into the pan
Fry donuts for 2-3 minutes, flipping the donuts over at 1 minute (do a test donut to ensure your time)
Donuts should float to the top within a few seconds of placing them in the fryer
Donuts will maintain a cake-like fluffiness with a crispy outside
Ice, glaze, or sprinkle with powered sugar and enjoy!
