This salad is a great way to use up hard boiled eggs or some of that Spring mix that's starting to look a little past its prime!
Ingredients
5 strips bacon, cooked, rough chopped
1 small red onion, slivered
2 tablespoons garlic, fresh minced
¼ cup red wine vinegar
1 teaspoon sugar
½ teaspoon dry mustard
Kosher salt
Black pepper to taste
3 cups Romaine lettuce, sliced
3 cups Spring mix with spinach
1 cup sliced mushrooms
2 hard boiled eggs, sliced
Preparation
In a skillet, cook bacon until crisp, remove to paper towels, reserve bacon grease.
Add onion and garlic, sauté lightly, add red wine vinegar, sugar, dry mustard, salt and pepper and bring to a boil.
Remove from the heat and add greens, mushrooms, bacon and eggs.
Toss lightly until wilted, serve immediately.
