Homemade Chicken Salad

This chicken salad is perfect for a summer picnic, a tea party, or simply to feed a crowd. Even better, you can take shortcuts along the way when necessary!

While we show this recipe using chicken that you cook overnight, you can easily cook the chicken in advance, use prepared chicken from the grocery store deli, or even use canned chicken (well drained).

Ingredients

6 large chicken breasts or about 8 cups of cooked and roughly diced chicken
Note: if preparing the chicken yourself, we recommend placing them in a crock pot with about 1/4 t. garlic powder, salt and pepper, and 1/2 cup water, and then cooking on low for about 8 hours, or overnight
1 1/3 cup mayonnaise
4 T. cider vinegar
2 t. salt
1/4 cup onion
2 1/2 T. celery seed
2 cups sliced almonds (using sliced means you do not need to toast the almonds unless you want a nuttier flavor)
2 cups sliced grapes (halves)
dollar rolls

Preparation

Prepare chicken as directed, so you have about 8 cups of chicken that is either shredded or diced.
Place chicken in large mixing bowl.
In separate small bowl, combine mayonnaise with cider vinegar and salt.
Stir mayo mixture into chicken.
Add salt, onion, and celery seed, and stir well.
Add almonds
Cut open rolls and spread chicken salad generously on rolls.
Add an additional sprinkling of celery seed if desired.
