Harvest Beets & Carrots with Maple Citrus Glaze--need we say more? Rich sweet maple syrup adds an autumn flavor note to this delicious oven-roasted harvest vegetable side dish. Or, make it as an impressive salad. Simply arrange room temperature roasted beets & carrots over fresh spinach. Top with crumbled goat cheese and a drizzle of maple cider vinaigrette. Magic!

Beets are notorious for staining everything they come in contact with while preparing. Wear gloves and slice on a nonporous cutting board for easier clean-up.
Ingredients
3 large beets, tops trimmed
1 pound carrots, peeled, cut into 2-inch pieces
2 tablespoons olive oil, divided
2 tablespoons maple syrup
1 tablespoon orange juice
1 tablespoon rice vinegar
Kosher salt and black pepper, as needed
Preparation
Preheat oven to 400°F.
Lightly toss beets in 1 tablespoon oil, wrap loosely in foil and roast for 1 hour, or until tender. Unwrap beets and cool. Peel and thick-slice beets.
While roasted beets are cooling, toss carrots in 1 tablespoon olive oil and roast uncovered on a shallow baking sheet for 15 minutes.
Add sliced beets to carrots and roast an additional 15 to 20 minutes.
Combine maple syrup, orange juice, unseasoned rice vinegar, salt and black pepper in bowl and whisk to blend.
Drizzle maple citrus glaze over hot roasted beets and carrots and serve warm or at room temperature.
