For BBQ pork tacos, layer pulled pork in warm griddled flour tortillas and top with slaw and crumbled feta or queso fresco cheese and a splash of hot sauce.
Ingredients
1 (5 to 7 lb.) pork shoulder or Boston butt roast
1 tablespoon dry BBQ seasoning blend
2 tablespoon olive oil
1 teaspoon kosher salt
1 to 2 cups Carolina-style honey mustard BBQ sauce, prepared
Preparation
Rub BBQ seasoning evenly over the pork.
Oven Method: Heat oil in a heavy Dutch oven over medium heat; add pork roast and brown on all sides.
Cover and slow-cook in a preheated oven at 300°F for 6 hours. (As the pork cooks it will slowly release pan juices, keep covered to allow meat to braise.)
Slow Cooker Method: Brown pork roast, if desired. Arrange pork roast in slow cooker, cover and cook on high for 6 hours. (As the pork cooks it will slowly release meat juices.)
Remove cooked pork roast from Dutch oven or slow cooker and transfer to a baking sheet. Using 2 large forks, pull the meat into large shredded pieces; season with salt. Drizzle BBQ sauce over shredded meat.
Cook BBQ pulled pork in a preheated oven at 400°F for 15 minutes, or until fatty bits of pork are sizzling and golden and BBQ sauce bubbles and starts to caramelize. Remove from oven; serve warm.
