Ingredients
2 boxes cornbread mix, prepare according to package directions
1 cup shredded pepperjack cheese
1 cup whole kernel corn, thawed
Preparation
Preheat oven to 400°F
Preheat skillet and roast corn for 3 to 5 minutes or until browned.
Add roasted corn and pepperjack cheese to the already prepared cornbread mix.
Pour batter into a greased cast iron skillet or greased baking dish.
Bake 20 minutes or until lightly golden.
