Inspired by hybrid burgers showing up on restaurant menus everywhere, our mushroom burger features a 50/50 blend of good quality ground beef and golden pan-roasted wild mushrooms seasoned with a robust Worcestershire pub burger seasoning blend. The golden caramelized mushrooms add a savory meaty umami flavor note to these delicious burgers. We added mayo, pickles and onions to our burgers; get creative with your own toppings such as Swiss cheese, avocado, lettuce and tomato.

Ingredients
8 tablespoons butter
6 portabella mushrooms, trimmed and sliced
2 packages (½ pint each) shiitake mushroom caps, sliced
1 package (8 ounces) sliced button mushrooms
2 pounds ground chuck 80/20
1 tablespoon Worcestershire pub burger seasoning blend
8 slices Fontina cheese
8 small ciabatta rolls, sliced and butter toasted
½ cup mayonnaise
As needed, caramelized onions
As needed, dill pickle slices
Preparation
Working in 3 separate batches, melt 2 to 3 tablespoons butter in large heavy skillet and pan-roast each variety of mushroom over medium heat, shaking pan frequently, until mushrooms are golden brown and all moisture has evaporated.
Transfer roasted mushrooms to colander and drain; arrange cooled mushrooms on paper towels and press out any remaining moisture. Fine chop drained mushrooms.
In a large bowl, combine ground beef and mushrooms; gently combine until blended; form into 8 patties. Season generously with Worcestershire pub burger seasoning blend and chill briefly.
In a large skillet, cook burgers over medium heat for about 5 minutes on each side, or until fully cooked. Top each burger with a slice of cheese and heat briefly to melt cheese.
Arrange butter toasted ciabatta rolls on flat work surface; top bottom halves of rolls with 1 tablespoon mayonnaise, mushroom burger/cheese, caramelized onions and pickles; close with top halves of rolls. Serve warm.
