School Days Pencil Cookies

You’ll be hard-pressed to eat only one of these Number 2 pencils. They’ll make you one sharp cookie.

Ingredients

3/4 cup granulated sugar
1/2 cup butter, softened (do not use margarine; reserve butter box)
1 large egg
1/4 teaspoon almond extract
2 1/4 cups Pioneer Original or Buttermilk Biscuit & Baking Mix
1 drop red food coloring
1/2 teaspoon yellow food coloring
1/2 cup miniature chocolate chips

Preparation

In large mixer bowl, beat sugar and butter until creamy. Add egg and almond extract; beat until light and fluffy. Add Pioneer Biscuit & Baking Mix, beating on low speed to combine.
Remove two 1/4-cup portions of the dough. Stir red food coloring into one 1/4-cup portion to make pink dough for the pencil erasers; reserve other 1/4-cup portion to make sharpened tips of pencils. Add yellow food coloring to remaining dough to make the yellow length of the pencils.
Shape cookies using one of the options below. Place pencils about 1 inch apart on baking sheet coated with cooking spray. Place a chocolate chip at the end of each white dough point for pencil lead.
Bake at 350°F for 7 to 9 minutes or until cookies just begin to brown. Cool on pan before removing to wire rack. Makes 5 to 6 dozen pencil-shaped cookies.
