When I think of BBQ Sauce I think of a rich, sweet yet zesty sauce. A mighty sauce that sticks not just on ribs, but on your fingers as well. A great sauce that leaves them talking and asking for more.
Ok, now that I have your attention, I will share my secret (root beer), with its peppery kick. Perfect for pork, chicken, and great for topping off the grill burgers, and pulled pork sandwiches.
My family has been making this sauce for generations. Yes, I have family from the South, and they owned pecan farms. But that’s another story!

Ingredients
5 tablespoons olive oil
2 sweet onions (Vidalia onions are my favorite!) peeled, and minced fine
2 teaspoons peeled and finely grated fresh ginger root. (Use Grandma’s box grater if you are lucky enough to have one)
4 tablespoons finely chopped garlic
4 cups root beer, (artisanally-produced with cane sugar is the best)
2 cups Heinz Ketchup
1/2 cup light brown sugar
5 tablespoons dark molasses
Zest and juice of one lemon
Kosher salt and ground black pepper to taste
Preparation
Equipment needs: Heavy 12 quart saucepan and a large wooden spoon
Place your saucepot on the stove, over medium heat, and add the oil.
Sauté the onions in oil until transparent.
Add the garlic and ginger and continue to sauté until the ingredients start to caramelize.
Add the root beer, and reduce by 50%.
Add the ketchup, brown sugar, lemon zest, and juice.
Simmer for 30 minutes over low heat.
Taste, and adjust with the salt and pepper.
Cool and refrigerate until ready to use.
