Gnocchi with Bolognese Sauce

Gnocchi with Bolognese Sauce takes just a few steps to make, and makes your kitchen smell amazing!

Gnocchi is usually found in the refrigerated foods section of your grocery store.

Ingredients

2-3 tablespoons olive oil
4 stalks celery, finely chopped
4 medium carrots, finely chopped
1 large yellow onion, finely chopped
6 garlic cloves, minced
¼ teaspoon crushed red pepper, optional
8 ounces pancetta, chopped
1½ pounds ground pork
1½ pounds ground chuck
1½ pounds ground sirloin
3 cups white wine, pinot grigio or a sauvignon blanc
2 cups tomato paste
3 teaspoons fresh thyme leaves, minced
6 cups whole milk
2 tablespoons unsalted butter
¼ cup heavy cream
Kosher salt as needed
Cracked black pepper as needed
16 ounces Gnocchi, prepared, serves 4

Preparation

In a large dutch oven heat olive oil, add celery, carrots, and onion and season with salt and pepper.
Sauté over medium heat until translucent.
Add garlic and pancetta and continue to sauté until pancetta begins to brown.
Add ground meats, season with salt and pepper and brown, about 8-10 minutes, stirring often so it doesn’t stick to bottom of pan.
Pour in white wine, tomato paste and thyme.
Cook on medium heat 2-3 minutes.
Turn heat to low and pour in milk.
Simmer for two hours, stirring frequently until it thickens.
If the sauce doesn't seem to be thickening, add a little more tomato paste; if it's too thick add milk.
Add butter and cream to finish.
Set aside and cover until ready to use.
Cook Gnocchi according to package directions in salted water.
Drain and toss with four cups sauce and top with freshly grated Parmesan cheese.
Save remaining sauce and freeze.
