Pitaya fruit is something we are a BIG fan of in our kitchen these days and not just because it is pretty! The nutritional benefits from this exotic fruit make it difficult not to love. Here's a way to be realistic about living healthy by making sweet treats in a healthier way--but only turn to this when youare in need of a little dietary splurge. You don’t want to get into a sugar trap; instead, satiate the need a little. This pitaya pudding is just that: a mini splurge without the guilt and SO easy to make!

Ingredients
1 packet of pitaya fruit
1 banana
1/2 cup hemp milk, unflavored
1/2 teaspoon vanilla extract
1/2 cup pure maple syrup
Optional: unsweetened shredded coconut, raw cacao nibs, bananas slices or fresh blueberries
Preparation
Blend it all together in a blender and enjoy!
Can top with unsweetened shredded coconut, raw cacao nibs, bananas slices or fresh blueberries.
