Just when you thought buttercream couldn't be any creamier, we go and introduce avocado to the mix! Here's a delicious icing to use when you want a something just a little different, with a halo of health around it.

If your frosting is runny (due to the avocado oil) you can add powdered sugar ½ cup at a time to thicken it up, in doing so you can also add lemon juice 1 tsp at a time to cut the consistency down.
Ingredients
1 avocado
1 tablespoon lemon juice
1 tablespoon lemon zest (approx. 1 lemon)
4 cups powdered sugar
Preparation
In a mixer, combine avocado, zest and lemon juice and add powdered sugar a cup at a time.
Mix until well integrated, store in refrigerator if not using immediately.
Use to ice pre-made cake or cupcakes.
