Adding to our series of Valentine's Day cocktails, Duo Restaurant & Lounge is offering the Forbidden Kiss. Created by DUO's expert cocktail team, the Forbidden Kiss has all the excitement of a jello-shot with the added class of fine Italian Prosecco. Created by Sabina and Lorraine Belkin.

Ingredients

2oz. Absolut apple orient
.5oz. Lime juice
.5oz. Simple syrup
2oz. Prosecco
2 Gelatin sheets
Diced Fresh Strawberries

Preparation

Soften gelatin sheets in ice water.
Mix Absolut apple, lime juice and simple syrup and then warm this mixture.
In a bowl, mix the gelatin sheets with the warmed Absolut mixture until gelatin is dissolved.
Add Prosecco and diced fresh strawberries to the mix.
Put mix in a mold and put in refrigerator until gelatin hardens (about 15 minutes).
Serve in special shot glass topped with Ginger ale and .5oz drops of either grenadine, Chambord, or apple pucker.

Green Tea Dark Chocolate Truffles

Matcha green tea, most commonly used in coffeehouse-style beverages such as iced green tea latte and Frappuccino, is available in Asian markets and health food stores. Sold in small tins, this intense tea powder adds an exotic fragrant flavor note

Ingredients

1/2 teaspoon matcha green tea
7 ounces 70% Dark Chocolate, fine chopped, divided

1/3 cup heavy cream
1/4 cup sugar
Matcha green tea, as needed to coat truffles

Preparation

Combine cream, sugar and 1/2 teaspoon matcha green tea in nonstick sauce pan and whisk to blend. Bring to a boil, stirring constantly; remove from heat.
Immediately add 5 ounces fine chopped chocolate to hot cream mixture and gently stir to blend. Spread chocolate/cream ganache mixture in shallow dish and refrigerate until firm to touch.
Shape chilled chocolate ganache mixture into balls and arrange on plate or baking sheet lined with wax paper. (If chocolate ganache gets too soft to roll into balls, refrigerate briefly.)
Freeze truffles until firm.
Melt 2 ounces chopped chocolate in top of double boiler. Dip frozen truffles in chocolate to lightly coat. Cool.
Roll cooled truffles in matcha green tea powder to lightly coat. Store truffles in refrigerator until ready to serve.

Use high quality premium chocolate bars for an indulgent chocolate covered caramel corn.

Ingredients

16 cups popcorn (fresh popped popcorn works
4 cups dark chocolate or semi-sweet chocolate baking chips
1/4 cup light corn syrup
1/2 cup butter, melted
1 cup brown sugar
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon vanilla extract

Preparation

Preheat oven to 250°F.
Combine corn syrup, butter and brown sugar in saucepan; simmer over medium low heat to syrup consistency.
Bring to a slow boil for 5 minutes without stirring.
Remove from heat; stir in baking soda, salt and vanilla.
Pour over popcorn and toss to evenly coat.
Transfer to greased cookie sheets and bake uncovered for 1 hour; stirring several times during baking.
Transfer caramel corn to large bowl and cool; breaking up clumps.
To prepare chocolate covered popcorn: Reserve 8 cups caramel corn (1/2 batch).
Working in small batches, portion 1 cup chocolate chips into microwaveable measuring cup. Microwave for 60 seconds, stir, microwave an additional 20 seconds and stir until chocolate is smooth and melted.
Combine melted chocolate with 2 cups caramel corn and stir to evenly coat; using tongs or fork, transfer chocolate covered popcorn pieces to cookie sheet lined with wax paper and cool.
Repeat steps 9 and 10 with remaining chocolate chips and caramel popcorn.
Cool until chocolate has hardened. Transfer to serving bowls or decorative containers.

This dark chocolate sauce can be made ahead and stored in refrigerator; to serve, heat in a double boiler over low heat, whisking occasionally. Serve warm.

Ingredients

6 ounces 77% Dark Chocolate Bar, broken into pieces
8 tablespoons heavy cream
1/2 cup water
1/2 cup sugar
1 ounce butter, diced into pieces
1/2 teaspoon vanilla extract

Preparation

Combine water and sugar in small sauce pan and stir to blend. Simmer over low heat, stirring occasionally, until sugar has dissolved and forms simple syrup.
Transfer simple syrup to top of a double boiler over low heat; slowly add broken pieces of dark chocolate and butter, whisking occasionally until chocolate is melted.
Slowly whisk in cream and vanilla until fully blended and smooth.
Serve warm.

Dark Chocolate Caramel Almond Candy with Sea Salt

You can use any berry to add a unique flavor to this candy--blackberries, blueberries, raspberries, strawberries. But, if you like your candy with just nuts, you can leave out the fruit without any effect.

Ingredients

2 cups whole salted almonds
1 cup butter
2 cups light brown sugar
15 ounces dark chocolate chips (about one and a half packages)
6 ounces fresh blackberries (or substitute fruit or dried fruit of your choice)
sprinkling of sea salt (optional)

Preparation

Lightly butter a cookie sheet or parchment paper on a cookie sheet
Sprinkle salted almonds over the cookie sheet, evenly distributed but slightly away from the edges; set aside
Slice blackberries so they are coin shaped (one or two slices per berry, depending on size) and add to nuts, sprinkled throughout the pan
Put butter and brown sugar in a saucepan
Cook together over medium high heat until mixture comes to a boil, stirring constantly
Continue cooking for 10 minutes, scraping sides and stirring constantly
(If desired at about 8 minutes, do the cold water test, where you put a drop of the mixture into a cup of cold water; if it immediately ribbons and will form into a soft ball, it is done)
Once done, immediately pour over nuts, covering them all, using a spatula to spread evenly
Melt dark chocolate (if using a microwave, it will take 2-3 minutes; check it every 30 seconds and stir so chocolate will not burn)
Pour chocolate over nuts, fruit and caramel
Sprinkle lightly with sea salt
Once cooled, simply break apart into pieces

Ingredients

1/2 cup heavy cream
1/4 cup water
1 pinch coarse sea salt
8 ounces dark chocolate, coarsely chopped
4 tablespoons unsalted butter, divided
1 (16 oz.) container of strawberries, rinsed, trimmed, sliced (about 3 cups)
1 tablespoon white sugar
1 cup mixed fresh berries (such as raspberries, blueberries and blackberries)
3 large eggs
1 cup half & half cream
8 (1-inch thick) slices rustic artisan-style country bread
Maple syrup, as needed

Preparation

To prepare chocolate sauce: combine heavy cream, water and salt in a small heavy saucepan and bring to a simmer. Remove from heat; add chopped chocolate and 2 tablespoons butter to cream mixture. Whisk until chocolate is melted and sauce is smooth. Reserve.
Combine strawberries and sugar in a medium size bowl and toss to blend. Add mixed fresh berries and gently stir to blend. Reserve.
To prepare French toast: combine eggs and half & half cream in a shallow container and whisk to blend.
Working in several smaller batches, dip sliced bread into batter to evenly coat; drain excess.
Heat 2 tablespoons butter in a large heavy skillet over medium heat. Add soaked bread and cook for 2 to 3 minutes on each side or until golden brown. Repeat with remaining slices.
Serve hot topped with fresh berries, maple syrup (if desired) and warm dark chocolate sauce.
