Skinnytaste Dinner Plan (Week 90). This week Madison goes back to school, so I added some easy, kid-friendly dishes this week including a few that I can pack in her thermos the next day (the pasta with broccoli and acini di pepe soup are perfect for this!).

Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. Tuesday: Enchilada Chicken Roll-Ups with Mexican Cauliflower “Rice”
Wednesday: Beef, Tomato and Acini di Pepe Soup (Instant Pot, Slow Cooker + Stove Top)
Thursday: Balsamic Chicken with Roasted Vegetables
Friday: Chicken Rollatini with Spinach Alla Parmigiana and salad
Saturday: Dinner Out
Sunday: Easiest Pasta and Broccoli Recipe
