Recipes: Bill’s Pear Pie

Bill’s Pear Pie

This wonderful fruit pie recipe was handed down from a fellow named Bill who clipped it out of a newspaper some 20 years ago. Year after year Bill brought his Pear Pie to family reunions and gatherings and it became famous in family circles as Bill’s Pear Pie. It was passed along to us by Adeline Bryan, of St. Louis, Mo.

Why Try? It tastes spectacular and is a flavorful departure from the usual.

 

Foodie Byte

For this pie we used unpeeled Bosc pears. This old fashioned pear pie also tastes great prepared with any seasonal baking pear such as ripe Bartlett or Anjou pear. Pinched for time or ingredients? Substitute canned drained pear halves for fresh pears in recipe.

Ingredients

5 fresh pear halves (2 1/2 whole pears cut in half lengthwise), cored and trimmed
1 (9-inch) pie shell, unbaked
3 tablespoons flour
1/2 cup sugar
1/4 teaspoon ground ginger
1 1/2 cups sour cream
1/2 cup flour
1/4 cup brown sugar
1/2 teaspoon nutmeg
1/4 cup butter, room temperature

Preparation

Preheat oven to 400°F.
Arrange trimmed pear halves, cut sides down, in unbaked pie crust.
Combine 3 tablespoons flour, 1/2 cup sugar, 1/4 teaspoon ginger and 1 1/2 cups sour cream in bowl and whisk to blend. Spoon evenly over pears.
Combine 1/2 cup flour, 1/4 cup brown sugar, 1/2 tsp. nutmeg and 1/4 cup butter in bowl and mix to coarse crumbled consistency. Spoon evenly over pie filling.
Bake pie for 20 to 25 minutes or until crumb topping is light golden brown.
Remove from oven and cool for 10 to 15 minutes before serving.

61st Summer Fancy Food Show

It's that time again--the Summer Fancy Food Show has started in New York City, sponsored by the Specialty Food Association. This is THE show for an industry that, for the first time, has topped $100 billion in sales. It's a world fueled by small businesses and entrepreneurs, all sure they have the most delicious, most innovative, most amazing food product you've ever seen!

The Food Channel has a crew at the show, working hard to bring you the trends and some of the best stories we can find. We're tasting our way through the 1500 exhibits and special events to bring you the latest ideas. While we can't yet say what we think all of the trends will be, we can call out a few things we're finding interesting:

  • Women-owned businesses are getting attention and a specific call out. While female entrepreneurs aren't new--especially in food--there appears to be a new emphasis on patronizing those businesses and making sure they have a chance in a crowded marketplace.
  • Water. You may think water is water, but we've tasted sparkling rainwater and volcanic water, and we are seeing innovation in water that leads us to believe there is more to come.
  • Salt. Have we decided that there is more to come in salt after table salt, uniodized salt, and sea salt? Apparently salt is a thing right now.
  • Ice cream. Maybe it's nostalgia with a twist, but ice cream seems to have come full circle. Expect to see more on that subject.
  • Global influence. We've been calling this out for years, for a reason: it keeps getting stronger. After tasting up and down the aisles in Turkey, we have decided to put it on our travel list so we can get a little more. Mexico, too, seems to have come into its own when it comes to claiming flavors no other country can claim quite as well.

We have lots more to bring you, and you can follow along with us on Periscope or most of our other social media. If you haven't found us on Periscope, it's a great way to follow along live as we walk the show floor, stopping and talking to exhibitors along the way! Take Fabiana, for example, who is part of the Italia Partner Country sponsorship this year. She is exhibiting a wonderful (like, one-of-the-best-things-we-tasted-wonderful) panettoni, and tells us, "I'm Italian! I just like to feed people!"

And, just like that, you get a flavor for one of the more interesting food shows. It's about people who have a passion for food. And, with that kind of passion, it's no wonder they really are creating the most delicious, most innovation, and most amazing food products you've ever seen!

Seaside Florida, A Hidden Gem


I love it when business and pleasure collide and that's exactly how I spent a weekend in Seaside Florida (the popular Northwest Florida beach community that is best known as the location for the film The Truman Show starring Jim Carrey) a few weeks back. This was my second visit there, but my first with my family and I just can't say enough great things about this charming beach town. I did a book signing on the porch of Sundog Books and I was really excited to bring my family and friends along for the trip and turn it into a little family getaway.


For those of you who are looking for a relaxing family getaway, clean beaches, blue water, friendly people, shopping, ceramics, beautiful rental homes, bike rides, food trucks, farmers markets, live music on the lawn, all within walking distance – Seaside is for you. Here's some info on how to get there, where to stay, eat, and things to do.


How to get there:

The closest airport to Seaside is Panama City Beach, Florida, it's about 35 minutes away from Seaside. Sunshine Shuttle picked us up in a large van, equipped with car seats and friendly faces. Seriously, we were greeted by the nicest driver which really set the tone for our wonderful trip.

Where to Stay:

The only way to truly experience Seaside with your family is renting a beach cottage. We stayed in a beautiful cottage rental called Watcha Dune with the Cottage Rental Agency which slept eight. It had a full kitchen, 2 porches with wooden deck chairs, board games, bicycles, pool passes, and beach passes all within a short walk (or bike ride) to the beach. CRA is the iconic beachside town’s original rental agency, started by its founder and remains the only on-site, full-service provider of private vacation rental properties and helps more than 100,000 guests each year make memories, plan weddings, even find the perfect bike for a daily ride.



Where To Eat:

My mornings start off with a short walk to Amavida Coffee and Tea, best place to go for a great cup of coffee (fair trade) as well as tacos, arepas, empanadas and more.


One of my favorite parts of Seaside are the permanently parked gourmet airstreams that line 30A, just off the beach. Here are a few of my favorites:

Frost Bites – Serves Hawaiian shaved ice, homemade frozen custard, fresh squeezed lemonade and cold drinks.
Raw & Juicy – Best place to get organic juices, smoothies, raw food and healthy beach snacks.
Barefoot BBQ – Hormone- and steroid-free BBQ. The smoked portabella and pulled chicken salad is a must! Murphy is one of the nicest people you'll ever meet; great food, great people.



Best Place to Eat While Watching The Sunset:


The Shrimp Shack has the best sunset views and a casual atmosphere, not to mention the best gulf shrimp in town! The steamed royal red shrimp and ice cold oysters on the half shell are a must.


Bud and Alley's has the best breakfast up on the deck where you can eat great food while you watch dolphins jumping out of the water. They are also open for lunch and dinner with wonderful sunset views. 

Best Place for a Mojito and Southern Food:


Great Southern Cafe is known for their awesome mojitos and delicious southern food.

Things To Do:

Beach: If jumping waves, building sand castles or just sitting back and reading a book while listening to the crashing waves sounds like heaven to you, well I can confirm there's nothing better. You can rent beach chairs and umbrellas ahead of time with Cabana Man and keep them set up for the duration of your stay. There's also surfing lessons for children as young as five years old as well as adults. 



Bike Riding: The best way to see this charming town is by renting a bike and peddling around. We even got smaller bikes with training wheels for the kids. If it's raining, you can hit the pottery shop and bring home a hand made souvenir.

Farmer's Market: Saturday and Tuesday mornings stop at the farmers market where you will here live music and sample produce from the local farmers as well as baked goods, empanadas, and more.

Shopping – If you want to pick up some snacks, beer, wine, cheese and crackers, etc Modica Market is right in town. The Seaside Style has shops for kids and adults, and there's also lots of great stores for toys, jewelry, beach ware, shoes and more.

Recipes: Rainforest Granola with Toasted Brazil Nuts

Rainforest Granola with Toasted Brazil Nuts

Inspired by the rainforests of the Amazon, this crunchy golden homemade granola recipe adds chunks of toasted brazil nuts, diced tropical dried fruit such as mango and pineapple, sweet dried banana chips, cashews and shredded coconut.

Why Try? Brazil nuts are a great source of selenium, a powerful antioxidant which has proven to protect against heart disease and cancer. Brazil nuts are also rich in protein and fiber. This delicious granola recipe offers a great way to get the healthful benefits of Brazil nuts into your diet.

 

Foodie Byte

For a lower-sugar variation; alternate natural unsweetened coconut, available in health food aisle of your grocery store, and agave nectar for sweetened coconut and brown sugar in recipe.

Ingredients

4 cups old fashioned oats
2 cups Brazil nuts, raw, chopped

1 cup sweetened coconut
1 cup cashews, unsalted, chopped
1/4 cup wheat germ
3/4 cup vegetable oil
1/3 cup honey
1/4 cup brown sugar
1 1/2 teaspoons vanilla extract
3 cups tropical dried fruit, diced (such as dried mango, papaya, pineapple, banana chips and shredded coconut)

Preparation

Preheat oven to 325°F.
Combine oats, Brazil nuts, coconut, cashews and wheat germ in large bowl; toss to blend.
In a separate bowl, combine oil, honey, brown sugar and vanilla and stir until blended. Pour over oat mixture and toss to evenly coat oat mixture.
Spread granola evenly onto a 13-inch x 18-inch baking sheet.
Bake uncovered for 45-60 minutes or until golden, stirring occasionally.
Remove from oven and cool.
In a large bowl, combine toasted granola with dried tropical fruit and gently toss to blend.
Transfer to storage container or zip lock bags to store.

Red, White and Blueberry Trifle

Red, White and Blueberry Trifle – a delicious, light dessert, perfect for the summer!

A heavenly mixed berry trifle made with summer fresh blueberries, strawberries, white chocolate pudding, angle foods cake and whipped cream.

This is an oldie, but very popular on Skinnytaste. With the fourth of July coming up next weekend, and all things red white and blue I'm sharing this from the archives.

Using store bought angel foods cake makes this quick and easy to prepare and no need to heat up the kitchen, but you can use a box mix or make it from scratch if you prefer, whatever you decide this will still be fabulous!
