One-Dish Chicken Parmesan Recipe

A mouthwatering, 6-ingredient, one-dish version of Chicken Parmesan made with chicken, marinara, basil, mozzarella cheese, and croutons!

Ingredients

1 tablespoon minced garlic
2 pounds thin boneless, skinless chicken breast cutlets
2 cups healthy marinara sauce
1 tablespoon dried basil leaves
1 1/2 cups shredded part-skim mozzarella cheese, divided
1 (5-ounce) package Caesar or garlic croutons

Preparation

Preheat oven 350°F. Coat 3-quart baking dish with nonstick cooking spray.
Season chicken and mix with garlic. Cover with marinara and sprinkle with basil.
Sprinkle with half the mozzarella, all the croutons, and top with remaining mozzarella. Bake 40-50 minutes or until chicken is tender.

Recipes: Grilled Chicken Shawarma Wrap Recipe

Grilled Chicken Shawarma Wrap Recipe

A twist on traditional Chicken Shawarma, this grilled version is served on a flatbread or pita of your choosing, with a creamy tarator sauce. Tarator is a tahini-based sauce that perfectly complements this wrap.

Ingredients

12 chicken thighs, or 6 whole legs, skinned and deboned
4 tbsp. vinegar
1 tsp salt
1 pinch celery seed
2 tsp white pepper
1 tbsp. paprika
1 tsp allspice
1 tsp garlic powder
For The Sauce:
1 tbsp. tahini
Juice of 1 lemon
Salt
For The Sandwich:
4 flatbreads
Cucumber or gherkin, sliced
Red onion, sliced
Fresh parsley, chopped

Preparation

Marinade the chicken overnight in the vinegar, salt and spices.
Light the BBQ. For a quick grill like this, you can get away with one of those lighting bags of lumpwood charcoal. Once the flames have died down, spread the coals out and begin grilling immediately. Lumpwood burns out quickly and the chicken can handle this early high heat.
Grill the chicken, turning and moving around as required. Lumpwood is also more likely than briquettes to heat unevenly so you will need to work with your grill.
Cook for about 20 minutes or until the chicken is tender.
Slice the chicken and pile into the bread with onion, pickle, parsley, and sauce.
Eat whilst still hot.

Skinnytaste Dinner Plan (Week 82). Summer is in full swing and I am adding some seasonal recipes to the meal plan this week.

Pictured below is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. BLT Lettuce Wraps

Crispy bacon, shredded lettuce and ripe diced tomatoes mixed with some light mayonnaise wrapped in a crispy green iceberg lettuce cup. These BLT lettuce wraps taste like a BLT sandwich, without the bread!
Skip the bread and enjoy all the flavors you love in a BLT, without all the carbs! So easy and seriously satisfies my BLT cravings. Add some avocado if you wish!

Ingredients

1/2 lb. macaroni, cooked to package instructions
1 can pineapple chunks, drained (reserve 1/2 cup liquid for dressing)
2 cups grilled SPAM, cubed
1/2 cup shredded carrots
1/2 cup red onion
1/2 cup mayonnaise
1/4 cup plain Greek yogurt
1/2 cup pineapple juice
1 tablespoon apple cider vinegar
Black pepper, to taste

Preparation

Combine the cooked macaroni, pineapple chunks, grilled SPAM, carrots, and onion together in one bowl. Stir to combine. Set aside.
In a separate bowl for dressing, combine mayonnaise, Greek yogurt, pineapple juice, apple cider vinegar and black pepper. Stir to combine until smooth.
Pour the dressing over your macaroni mixture and stir until completely mixed.
Chill for 30 minutes, and serve.

The time-honored tradition of Wimbledon afternoon tea is a delicious way to enjoy the Wimbledon Tennis Open this year.

We’ve paired 3 favorite tea sandwiches with indulgent mini desserts, British tea, and chilled champagne. Be sure to include a traditional strawberry dessert, such as fresh berries and Devonshire cream or an indulgent strawberry pastry. Let the events begin!

For carefree entertaining, tea sandwiches can be made ahead and refrigerated for several hours- just be sure to cover tightly with film wrap to keep sandwiches from drying out.

Ingredients

Roast Beef & Horseradish Tea Sandwiches:
1/2 cup mayonnaise
2 tablespoons drained ground horseradish
12 slices pumpernickel bread
6 thin slices roast beef (about 6 ounces)
1 1/2 cups fresh arugula
1/4 small red onion, thin sliced
Lemon-Dill Smoked Salmon Tea Sandwiches:
4 ounces cream cheese, softened
1/2 tablespoon fresh minced dill
1 teaspoon freshly squeezed lemon juice
To taste, salt and black pepper
12 baguette slices
4 ounces smoked salmon, thin sliced
24 cucumber slices
12 fresh dill sprigs
Prosciutto-Basil Tea Sandwiches:
12 slices best quality white bread
5 ounces goat cheese, softened
4 ounces thin-sliced prosciutto
2 tablespoons fresh basil, chiffonade
As needed, mini desserts (scones, pastries, cakes, fresh berries)
As needed, fresh brewed English tea (such as Darjeeling, Earl Grey)
As needed, chilled champagne

Preparation

To Prepare Roast Beef & Horseradish Tea Sandwiches:
Combine mayonnaise and horseradish in a bowl and whisk to blend. Spread evenly over 1 side of each pumpernickel slice.
Layer roast beef on bottom 6 slices; top with arugula and red onion. Cover with top 6 slices of bread and press closed. Cut off crusts and slice each sandwich into 4 strips. Arrange on serving platter, cover and refrigerate.
To Prepare Lemon-Dill Smoked Salmon Tea Sandwiches:
Combine cream cheese, dill and lemon juice in small bowl and stir to blend. Season to taste with salt and black pepper. Spread evenly over baguette slices.
Top evenly with smoked salmon, cucumbers, and dill. Arrange on serving platter, cover and refrigerate.
To Prepare Prosciutto-Basil Tea Sandwiches:
Spread goat cheese evenly on 6 slices of white bread.
Top evenly with prosciutto and basil chiffonade. Cover with 6 top slices of bread and press closed. Cut off crusts and slice each sandwich in half forming triangle-shaped tea sandwiches. Arrange on serving platter, cover and refrigerate.
To Serve:
Unwrap sandwiches and arrange on a table. Accompany with mini desserts from your local bakery arranged on a pedestal, if desired.
Serve with hot tea and fresh champagne.

If you’re lucky enough to attend Wimbledon, you’ll undoubtedly find yourself sipping a few glasses of the British drink known as a Pimm’s Cup. Enjoy one at home with this recipe! Pimm's says to "pile all the ingredients into a tall glass, mix and sip." The ingredient amounts aren't specific, but a few slices of each fruit and a couple of mint springs should suffice.

Ingredients

I cup mint leaves, fresh, plus for garnish
1 orange, sliced
5-6 strawberries, quartered
1/2 English cucumber, sliced thin
1 lemon, sliced
1 lime, sliced
Pimm’s Cup No. 1, as needed
Lemon-lime soda or lemonade, as needed

Preparation

For A Pitcher:
Layer in some fresh mint, orange slices, strawberries, cucumbers, lemons, and limes. Pour in 1 part Pimm’s Cup No. 1 and top with 3 parts lemon-lime soda. Pour over ice and fruit.
Depending on the size of your pitcher, this could easily be doubled.
For Single Serving:
Layer in a tall glass the mint, orange slices, strawberries, cucumber, lemon, and lime. Fill with ice, pour 1 part Pimm’s Cup No. 1 and top with lemon-lime soda. Garnish with fresh mint sprig.
