Recipes: Brazilian Chocolate Cake

Brazilian Chocolate Cake

Brazilian Chocolate Cake takes your desserts to a new place!

*Nescau is a version of sweetened cocoa powder created by Nestle for Brazil, and can be found in any Brazilian store or online. You can substitute Nesquick, using the same amount.

Ingredients

For the Cake:
1 1/3 cup plus 1 tablespoon (200g) all-purpose flour
3/4 cup (105 g) Nescau (*)
1 teaspoon (4g) baking powder
1/8 teaspoon salt
1 stick (8 tablespoons, 115g) unsalted butter, at room temperature
1/2 cup (100g) sugar
1 egg
1 teaspoon vanilla
1 cup (250ml) whole milk
For the Glaze:
3/4 cup (200g) heavy cream
6 oz (170g) bittersweet chocolate, finely chopped

Preparation

Make the Cake:
Preheat the oven to 350˚F.
Whisk together the flour, nescau, baking powder, and salt.
In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar together on medium speed until creamy and smooth, about 4 minutes, scraping the sides of the bowl as needed.
Add the egg, and beat for one minute more, then beat in the vanilla.
Reduce the speed to low, then add half of the milk, then half of the flour mixture; repeat with the remaining milk and flour until combined.
Pour the batter into the prepared mold and bake in the oven until the cake starts to pull from the sides and a toothpick inserted in the center comes out clean, about 25 minutes.
Transfer the pan to a rack and allow the cake to rest for 5 minutes, then invert onto the rack and let it cool to room temperature.
Make the Glaze:
Place the chocolate in a heatproof bowl and set aside.
In a medium saucepan, bring the cream to a boil, then pour over the chocolate; let it stand for a minute to melt the chocolate; whisk until smooth.
Let it cool to room temperature, stirring occasionally.
When is pourable but cool, pour the glaze on top of the cake.

Zucchini Soup from The Elegant Gourmet
 

Great for winter chill! Zucchini soup is very tasty and this vegetable gives the soup an attractive green color. Zucchini or courgette is a summer squash and can be dark or light green. In a culinary context, zucchini is treated as a vegetable; it is usually cooked and presented as a savory dish or accompaniment. Botanically, however, zucchini is a fruit.

Our recipe keeps it as pure as possible, and this soup is pretty amazing, even chilled the next day. It’s a thin soup, but if you prefer a thicker, more substantial soup, add more zucchini and/or less stock or even cream.

This soup can be made ahead and refrigerated.

Ingredients

2 to 3 zucchini, medium size, quartered
1 to 2 tablespoons butter
1/4 to 1/3 cup sweet onion, chopped
3 to 4 cups chicken or vegetable stock
1+ teaspoon salt
Arugula
Piment d'espelette
Harissa oil

Preparation

In a stock pot, melt the butter then sauté the onions until translucent.
Season with salt then add zucchini.
Cook for a few minutes, stirring, and then add the stock.
Bring to a boil then reduce heat to simmer and cover.
Simmer until zucchini are tender, about 15 minutes.
Let cool 15 minutes.
Transfer to a blender, and blend until smooth and ultra-creamy.
You may need to purée in two batches.
Taste and adjust seasoning.
Garnish with a mound of arugula, piment d'espelette, and harissa oil.

Skillet Chicken Cordon Bleu

Skillet Chicken Cordon Bleu – this quick, light chicken dish is inspired by one of my favorite dishes – chicken cordon bleu without the rolling, breading and baking. It's delicious, low carb and perfect for weeknight cooking!

Thin boneless chicken cutlets, lightly pan fried then topped with ham and swiss in a light lemon dijon sauce. An easy weeknight chicken dish your family will LOVE!

I love making Chicken Cordon Bleu which I usually bread, roll and bake. But I wanted something quick with the same ingredients and came up with this – lazy chicken cordon bleu made all in one skillet. This is great with roasted veggies or you can serve this with rice pilaf.

Skinnytaste Dinner Plan (Week 11)

Happy New Year! I'm just returning from a long fun weekend away in Pennsylvania with my family but I'm excited to get back home to my routine, meal planning and cooking at home.

This is week 11 of sharing my weekly dinner plans since launching The Skinnytaste Meal Planner. If you're new here you can see the older plans below. Meal planning is so helpful to plan my dinners for the week. I do this on the weekend, then make a shopping list before I head out to the supermarket.
It also organizes my week and helps me spend less time (and money) in the supermarket.

Skinnytaste Dinner Plan (Week 11)

My breakfast isusually something quick like eggs with fruit, a smoothie or avocado toast. We're a family of four, so if a recipe serves more, it's either packed up for everyone's lunch or eaten the next day as leftovers.
